Wine enthusiasts, welcome! At the appointed time we'll meet at the entrance of the Páez Morilla winery and begin a tour that will show us as never before the production of three local products of great value: wine, whiskey and sherry vinegar.
To begin, we'll unveil the secrets of this sherry winery going back to its foundation and reviewing its important family tradition. Afterward, we'll go to the different warehouses where we'll find the Sherry Casks. Never heard of it? We'll learn all about these peculiar barrels or casks filled with sherry wines, which will later be used for the production of whisky.
The next part of the visit will take us into the Sherry Vinegar cellar, an ideal place to learn about the process of acetification, as well as the classification of these products according to their age. We'll learn the system of Criaderas and Soleras!
Finally, we'll tour the Bodega-Museum, where we'll see a collection of wine labels from the Marco de Jerez, as well as an exhibition of photographs that will help us understand the history of the winery. To complete the visit, we'll enjoy a tasting of sherry vinegar and two white wines: Tierra Blanca dry and Tierra Blanca semi-sweet, the finishing touch to the tour!
Then, 2 hours later, we'll say goodbye, toasting with this delicious sherry wine.
